Étude des applications des technologies de l’industrie alimentaire 4.0 pour la traçabilité et la durabilité des chaînes logistiques agroalimentaire : cas de la filière halio-industrielle

Résumé
Cet article propose une mutualisation des technologies émergentes de l’industrie 4.0 comme la technologie de blockchain, Internet des objets et d'intelligence artificielle afin d’aboutir à une chaîne logistique durable, performante et transparente. Toutefois la plupart des recherches restreint leur analyse sur l’apport spécifique de l’une de ces technologies au lieu d’avoir une vision intégrée de l’usage combiné de ces technologies ce qui entrave la transition digitale de la chaîne logistique.
Pour combler cette lacune, on a commencé par une analyse de la revue de la littérature systématique qui identifie les technologies émergentes les plus citées et examine leur contribution durable dans la chaîne logistique de l’industrie alimentaire. Par ailleurs, nous avons mené une étude exploratoire dans le domaine halio-industriel pour identifier l’usage de ces technologies au Maroc et au niveau international, en offrant un aperçu détaillé des fonctionnalités et avantage de leur adoption pour assurer une meilleure transparence et durabilité de la chaîne logistique.
Les résultats de ces deux études mettent en évidence le potentiel des technologies émergentes de l’industrie 4.0 pour répondre aux préoccupations durables de la chaîne logistique et soulèvent le défi de la mutualisation de ces technologies pour réussir la transition digitale et durable.

Abstract
This article proposes a pooling of emerging Industry 4.0 technologies, such as blockchain, the Internet of Things, and artificial intelligence, to achieve a sustainable, efficient, and transparent supply chain. However, most research focuses its analysis on the specific contribution of one of these technologies instead of taking an integrated view of their combined use, thus hindering the digital transformation of the supply chain.
To address this gap, we began with a systematic literature review that identifies the most frequently cited emerging technologies and examines their sustainable contribution to the food industry supply chain. Furthermore, we conducted an exploratory study in the seafood industry to identify the use of these technologies in Morocco and internationally, providing a detailed overview of the functionalities and advantages of their adoption to ensure greater transparency and sustainability of the supply chain.
The results of these two studies highlight the potential of emerging Industry 4.0 technologies to address the sustainability concerns of the supply chain and raise the challenge of pooling these technologies to successfully achieve the digital and sustainable transition.
